De La Calle produced nostalgia for old-fashioned drinks from recipes that have been passed down for centuries. The word "Tepache" itself is derived from the Nahuatl word "Tepitl," which really informs them that the original version of this dish was made with corn rather than pineapple. Central Mexico's Aztec and Toltec civilizations, where their story begins, spoke the Nahuatl language.
The legend is (and many historians believe) that people were making the corn version for many years before that evolved into tejuino, tejuino is still made and enjoyed today pineapples enter the game sometime around the Aztec era since they know they were grown and traded throughout the region and into Central America.
